Ingredients
Pizza Dough
- ¾ cup warm water
- 1 tsp honey
- 1 tsp dried yeast
- 1½ cups whole wheat flour
- ¼ tsp salt
- 1 tbsp olive oil
Caramelized Onions
- 1 tbsp olive oil
- 2 red onions, sliced thin
- 2 tbsp coconut sugar
- 1 tbsp balsamic vinegar
- ¼ tsp salt
Toppings
- 100 grams goat cheese, crumbled
- fresh thyme
Instructions
- Prepare the Pizza Dough: In a small mixing bowl, combine warm water, honey, and dried yeast. Stir and set aside for 10 minutes until the yeast foams. In another bowl, whisk together whole wheat flour and salt. When the yeast mixture is foamy, pour it into the flour mixture along with olive oil. Stir to form a dough. Transfer the dough onto a floured surface and knead for 2-3 minutes. Place it back into the mixing bowl, cover, and let it rest in a warm place for 30-45 minutes until it doubles in size.
- Prepare the Caramelized Onions: While the dough is resting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add thinly sliced red onions and sauté for 2-3 minutes. Lower heat and continue cooking for another 10 minutes, stirring constantly and adding small amounts of water to prevent sticking. Stir in coconut sugar and balsamic vinegar and cook until the onions are completely caramelized. Remove from heat, season with salt, and set aside to cool.
- Assemble Pizza: Preheat your oven to 390°F (200°C). If using a pizza stone, place it in the oven to heat. Once the dough has risen, transfer it to a baking tray lined with parchment paper, stretching it into a 12-inch round. Alternatively, divide the dough into two smaller pizzas. Spread the caramelized onions evenly over the dough, sprinkle with crumbled goat cheese, and garnish with fresh thyme.
- Bake the Pizza: Place the pizza on the heated pizza stone or keep it on the baking tray. Bake for 15-20 minutes until the crust is golden and cooked through and the toppings are warmed and slightly browned.
- Serve: Remove the pizza from the oven and cut it into 8 even slices. Serve warm for the best flavor and texture.
Notes
- Make sure the water is warm, not hot, to properly activate the yeast.
- Allow the dough to rest in a warm environment for optimal rising.
- Pizza dough can be prepared in advance, stored covered in the refrigerator, and brought to room temperature before use.
- Cooked pizza bases can be frozen for up to 3 months for future use.
