- 2 ripe mashed bananas (about ¾ cup)

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a 9” x 5” loaf pan with parchment paper to prevent sticking and make removal easier.
- Mix Wet Ingredients: In a large bowl, mash the bananas thoroughly until smooth with minimal chunks. Then whisk in the eggs, chopped pineapple, and vanilla extract until the mixture is well combined.
- Combine Dry Ingredients: Add the almond flour, ground cinnamon, baking soda, and sea salt to the wet mixture. Stir everything together until a thick, uniform dough forms.
- Prepare the Batter: Transfer the batter into the prepared loaf pan and spread it evenly. If using, sprinkle shredded coconut and chopped pecans on top for texture and crunch.
- Bake the Bread: Place the loaf pan on the center rack of the preheated oven and bake for 30 minutes. After 30 minutes, remove the bread, cover it loosely with aluminum foil to prevent over-browning, then return it to the oven for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean and the edges are golden brown.
- Cool and Serve: Take the bread out of the oven and allow it to cool in the pan for at least 30 minutes before slicing. This cooling step helps the bread set and makes slicing easier.
Notes
- The bread contains nuts and eggs, so it is not suitable for nut-free or vegan diets.
- Make sure bananas are very ripe for maximum sweetness and moisture.
- Using parchment paper ensures easy removal and prevents sticking.
- Covering the bread halfway through baking prevents the crust from becoming too dark while ensuring the inside cooks thoroughly.
- This bread stores well at room temperature for 2 days or in the refrigerator for up to a week.
- For extra sweetness, you can add a tablespoon of honey or maple syrup, but it will no longer be strictly grain-free.
