Ingredients
Filling Ingredients
- 1/2 cup white sugar
- 6 Tbsp cornstarch
- Pinch of salt
- 1/8 tsp cinnamon
- 2 1/2 cups fresh grape juice (preferably unsweetened fresh juice)
- 1 Tbsp lemon juice
Pie Shell
- 1 9-inch baked pie shell or 24 tart shells
Topping
- 2 cups whipping cream
Instructions
- Prepare the filling base: In a medium saucepan, whisk together the sugar, cornstarch, salt, and cinnamon until well combined to ensure even thickening and flavor distribution.
- Add the grape juice: Slowly pour in the grape juice while whisking gently to avoid creating foam, which can affect the texture of the pudding. Make sure to incorporate the juice evenly with the dry ingredients.
- Cook the mixture: Place the saucepan over low heat and stir constantly to prevent lumps and sticking. Continue cooking until the mixture thickens into a smooth, pudding-like consistency.
- Finish the filling: Remove the saucepan from heat and stir in the lemon juice to add brightness and balance the sweetness of the grape pudding.
- Assemble the pie or tarts: Pour the hot grape filling into the prepared baked pie shell or tart shells, spreading evenly.
- Cool and chill: Allow the pie or tarts to cool to room temperature, then refrigerate until fully set and chilled, approximately 2-3 hours.
- Prepare the whipped cream topping: Whip the 2 cups of whipping cream until soft peaks form. Optionally, you can add a little sugar or vanilla extract if desired for extra flavor.
- Serve: Just before serving, spread or pipe the whipped cream over the set grape filling for a luscious finish.
Notes
- Use fresh, unsweetened grape juice for the best natural flavor and to avoid an overly sweet filling.
- Whisk the grape juice in slowly to prevent foaming, which can make the filling texture uneven.
- The pie or tarts must be chilled well to allow the pudding filling to fully set.
- For a sweeter whipped cream topping, add 1-2 tablespoons of powdered sugar while whipping the cream.
- If making tart shells, adjust chilling and serving times accordingly as the smaller portions may chill faster.
