  • Total Time: 1 hour 40 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 4 small chicken breasts, about 1 1/4 pounds
  • 1/4 cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

Bowl

  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced or chopped cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese

Tzatziki

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt, or to taste
  • 1 tablespoon fresh chopped dill

Instructions

  1. Make the Chicken Marinade: In a bowl, whisk together the olive oil, lemon zest, lemon juice, honey, garlic powder, dried oregano, dried basil, salt, black pepper, and red pepper flakes to create a flavorful marinade for the chicken.
  2. Marinate the Chicken: Pound the chicken breasts to about 1/2 inch thick for even cooking. Place the chicken in a shallow bowl or a ziplock bag and pour the marinade over it. Allow to marinate for at least 30 minutes up to a few hours to infuse the flavors.
  3. Prepare the Tzatziki Sauce: While the chicken marinates, combine the Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and fresh dill in a bowl. Mix well and set aside to let the flavors meld.
  4. Prep Rice and Vegetables: Cook rice or quinoa according to package instructions. Chop the tomatoes, cucumbers, romaine lettuce, and slice the red onion to prepare all bowl components. Optionally, add pitted olives for authenticity.
  5. Cook the Chicken (Air Fryer Method): Preheat your air fryer to 380°F. Place marinated chicken breasts in the basket and air fry for 7 minutes on one side. Flip and cook for an additional 3-4 minutes or until the internal temperature reaches 165°F.
  6. Alternative Cooking (Stovetop): If you don't have an air fryer, heat a skillet over medium-low heat with some oil or butter. Cook the chicken breasts 7-8 minutes on one side until golden, flip and cook until the internal temperature reaches 165°F.
  7. Rest and Slice Chicken: Remove the chicken from heat and let it rest for 5 minutes to retain juices. Then slice the chicken into strips.
  8. Assemble the Bowls: Divide the cooked rice or quinoa among bowls. Top with shredded romaine, tomatoes, cucumber, red onion, sliced chicken, and sprinkle with feta. Dollop tzatziki sauce on top. Optionally drizzle with olive oil and extra lemon juice or a lemon tahini dressing for extra flavor.
  9. Serve and Enjoy: Serve immediately and enjoy a vibrant, wholesome, and delicious Greek Chicken Bowl that's perfect for meal prep or a fresh weeknight dinner.

Notes

  • For extra flavor, cook the rice or quinoa in chicken broth instead of water.
  • Squeeze fresh lemon juice into the cooked rice and season with salt, pepper, chopped parsley, and chives to enhance the taste.
  • Feel free to add pitted olives into the bowls for a more traditional Greek flavor.
  • Resting the chicken after cooking helps maintain juiciness and tenderness.
