Ingredients
Salad
- 3 tomatoes (size of a tennis ball)
- 4 Lebanese / Persian cucumbers (about 8"/20cm long)
- 1/2 small red onion (size of a tennis ball)
- 1 small green capsicum / bell pepper
- 8 oz / 250 g feta block
- 5.5 oz / 125g black kalamata olives
- 1 tsp dried oregano
Greek Salad Dressing
- 1 garlic clove, minced (about 1/2 tsp minced garlic)
- 1 tsp dried oregano
- 1/4 tsp salt (or 1/2 tsp Kosher salt)
- Freshly ground black pepper to taste
- 3 tbsp red wine vinegar
- 6 tbsp extra virgin olive oil (preferably Greek)
Instructions
- Prepare the dressing: Place all Greek salad dressing ingredients in a jar and shake well until fully combined. Set aside for 20 minutes to allow the flavors to infuse.
- Cut the tomatoes: Cut each tomato into 6 wedges, then further cut each wedge into 3 or 4 pieces. If the tomatoes are watery, gently scoop out the watery seeds with a teaspoon to avoid excess liquid in the salad.
- Slice the cucumbers: Slice the cucumbers into 1/2 cm (1/5") thick slices. For thicker cucumbers, slice them vertically in half first, then slice.
- Prepare the onion: Peel and finely slice the red onion into rings or half rings, depending on preference. To mellow the raw sharpness, optionally soak the sliced onion in water for 15 minutes and then drain.
- Cut the capsicum: Cut the green capsicum into short strips.
- Cube the feta: Cut the feta block into 1 cm (2/5") cubes.
- Assemble the salad: In a large bowl, combine the prepared tomatoes, cucumber slices, onion, feta cubes, and Kalamata olives. Sprinkle dried oregano evenly over the ingredients.
- Add the dressing and toss: Pour the prepared Greek salad dressing over the salad then gently toss everything together until well coated.
- Serve: Serve the salad immediately to enjoy its fresh and vibrant flavors.
Notes
- Kalamata olives are the classic choice for Greek salad. Using olives with pits retains juiciness, but pitted olives are fine too. Opt for dark, plump olives for best flavor.
- If you find raw red onion too sharp, soak the slices in water for 15 minutes before draining to soften their bite.
- Nutrition values are calculated per serving assuming 5 servings total. Using low fat feta will reduce calories to approximately 300 per serving.
