Ingredients
Flatbread Base
- 2 flatbreads, store bought or homemade lavash
- Extra virgin olive oil, for brushing
Cheese & Seasoning
- 6 ounces ricotta cheese
- 6 ounces feta cheese, crumbled
- Dried oregano, to taste
Vegetables & Toppings
- 7 ounces marinated artichoke hearts, drained, patted dry, and sliced
- 1 handful baby spinach
- 1 Roma tomato, halved and thinly sliced
- 1 small shallot, thinly sliced
- 6 pitted Kalamata olives, halved
- 1 handful sun-dried tomatoes, roughly chopped or sliced
Instructions
- Prepare oven and baking sheet: Place one oven rack near the center and another a few inches below the broiler. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Warm the flatbreads: Place the flatbreads directly on the middle oven rack for 1 to 2 minutes until slightly warm. Remove carefully and switch the oven setting to broil.
- Assemble the flatbread pizzas: Transfer the warmed flatbreads onto the parchment-lined baking sheet. Lightly brush the surface of each flatbread with extra virgin olive oil. Evenly spread the ricotta cheese over each flatbread, then sprinkle crumbled feta on top. Add a generous amount of dried oregano. Arrange the sliced marinated artichokes, baby spinach, Roma tomato slices, thin shallots, Kalamata olive halves, and sun-dried tomatoes across each flatbread. Finish with an additional sprinkle of oregano.
- Broil the pizzas: Set the baking sheet with flatbreads onto the top oven rack just a few inches away from the broiler heat. Broil for approximately 3 minutes until the cheese softens and toppings are warmed through. Watch carefully to prevent burning.
- Serve: Remove the flatbread pizzas from the oven, slice into portions, and enjoy immediately.

- Shop Mediterranean ingredients such as quality extra virgin olive oil, oregano, and sun-dried tomatoes to maximize authentic flavor.
- Feel free to substitute the flatbread with your favorite wrap bread, pita, or naan. Gluten-free and whole wheat options also work great.
