These Grilled Halloumi & Vegetable Skewers feature a delightful combination of squeaky Halloumi cheese and fresh vegetables marinated in a zesty garlic lemon dressing. Perfect for a light and flavorful summer meal, these skewers are easy to prepare and quick to grill, delivering a savory, smoky dish that satisfies vegetarians and cheese lovers alike.

  • Total Time: 50 minutes
  • Yield: 10 servings

Ingredients

Cheese & Vegetables

  • 9 oz Halloumi cheese, cut into 3/4 inch thick squares
  • 2 medium zucchinis, cut into 1/2 inch slices
  • 1 medium red onion, cut into wedges
  • 8 oz Baby Bella mushrooms
  • 10 oz grape or cherry tomatoes

Marinade

  • 4 medium garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice (about 1 large lemon)

Instructions

  1. Marinate the Halloumi and vegetables: Place the Halloumi cheese and all the cut vegetables into a large bowl. Add the minced garlic, Italian seasoning, kosher salt, black pepper, olive oil, and lemon juice. Toss everything together thoroughly until the cheese and veggies are well coated with the marinade.
  2. Chill the marinade: Cover the bowl tightly with plastic wrap or foil and refrigerate for at least 30 minutes to let the flavors meld. For deeper flavor, you can marinate overnight.
  3. Prepare the skewers: When ready to grill, thread the marinated Halloumi and vegetables alternately onto metal or bamboo skewers, ensuring a balanced distribution for even grilling.
  4. Grill the skewers: Heat a BBQ grill to medium heat. Place the skewers on the grill and cook for about 4-5 minutes per side, until the Halloumi develops a golden crust and the vegetables are tender but still crisp.
  5. Serve: Remove the skewers from the grill and serve immediately. Enjoy the rich, tangy, and smoky flavors of this simple yet delicious dinner.

Notes

  • Soaking bamboo skewers in water for 30 minutes before grilling prevents them from burning.
  • If you prefer, you can substitute the Baby Bella mushrooms with button mushrooms or other varieties.
  • For a vegan version, substitute Halloumi with firm tofu and adjust the marinade accordingly.
  • Marinating overnight intensifies the flavor and tenderizes the vegetables more thoroughly.
  • Use a grill basket if you have difficulty threading smaller veggies onto skewers.
