These Grilled Shrimp Skewers are a delicious and quick seafood recipe, perfect for a light dinner or appetizer. Marinated in a zesty blend of lemon, avocado oil, and spices, the shrimp get perfectly charred on a hot grill, resulting in tender, flavorful bites with a hint of smoky heat.

  • Total Time: 33 minutes
  • Yield: 4 servings

Ingredients

Marinade and Shrimp

  • 1 pound raw shrimp (peeled and deveined)
  • 3 Tbsp avocado oil
  • 2 Tbsp fresh lemon juice (or fresh lime juice)
  • Zest of 1 lemon (or lime)
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

For Serving

  • Fresh lemon wedges
  • Fresh herbs such as chopped parsley, chives, or cilantro (optional)

Instructions

  1. Prepare the Marinade: In a small bowl or measuring cup, whisk together avocado oil, lemon juice, lemon zest, paprika, garlic powder, onion powder, sea salt, black pepper, and red pepper flakes if using, until well combined.
  2. Marinate the Shrimp: Place the peeled and deveined shrimp into a sealable container or zip lock bag. Pour the marinade over the shrimp, seal tightly, and gently toss or massage the bag/container to ensure all shrimp are evenly coated. Refrigerate for at least 20 minutes and up to 2 hours for optimal flavor.
  3. Preheat the Grill: When ready to cook, preheat your grill to high heat, around 450 to 500 degrees Fahrenheit. Clean the grill thoroughly to remove any residue and brush the grates lightly with oil using a silicone brush or cooking spray to prevent sticking.
  4. Skewer the Shrimp: Thread the marinated shrimp onto metal skewers, spacing them slightly apart to ensure even cooking. If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning.
  5. Grill the Shrimp: Place the shrimp skewers onto the preheated grill and close the lid immediately. Cook for about 2 minutes until the shrimp begin to char and turn pink.
  6. Flip and Finish Cooking: Using heat-safe tongs, flip the skewers over. Close the grill lid again and cook for an additional 1 to 3 minutes until shrimp are fully cooked, charred on both sides, and opaque throughout.
  7. Serve: Remove the shrimp skewers from the grill and transfer to a serving plate. Garnish with fresh lemon wedges and sprinkle with chopped fresh herbs like parsley, chives, or cilantro, if desired. Serve immediately.

Notes

  • Make sure to pre-soak wooden skewers for at least 30 minutes to avoid burning on the grill.
  • Do not overcook shrimp as they can become tough; cook until just pink and opaque.
  • You can substitute lime juice and zest for lemon for a slightly different citrus flavor.
  • Marinating for longer than 2 hours is not recommended as citrus juice can start to cook the shrimp.
  • Use metal skewers for the best grilling experience or ensure wood skewers are soaked well.
