Instructions
- Preheat the grill. Heat an outdoor grill or indoor grill pan to medium high heat to prepare for cooking the lobster tails.
- Cut the lobster tails. Using kitchen shears, cut down the top shell of each lobster tail. Then, with a sharp knife, carefully slice through the exposed lobster meat, stopping before cutting through the bottom shell.
- Flatten the lobster tails. Gently spread open each lobster tail using your hands and insert a wooden or metal skewer through the meat to keep it flat for grilling.
- Season the lobster tails. Brush each tail with olive oil, then season generously with salt and pepper to enhance the flavor during grilling.
- Prepare the garlic butter sauce. Combine butter, minced garlic, parsley, and a pinch of salt in a small microwavable bowl. Microwave in 20-second intervals until the butter has melted, stirring well to blend all ingredients.
- Grill lobster tails, first side. Place the lobster tails flesh side down on the preheated grill and cook for 5 minutes to develop a nice sear.
- Grill lobster tails, second side & baste. Flip the tails over, drizzle the prepared garlic butter generously over the top, and grill for another 4-5 minutes or until the meat is opaque and fully cooked.
- Garnish and serve. Sprinkle additional fresh parsley over the lobster tails for color and flavor, then serve immediately with lemon wedges on the side for squeezing.
Notes
- Be careful not to cut all the way through the bottom shell when preparing the lobster tails.
- Using a skewer helps keep the lobster meat flat for even grilling.
- You can substitute fresh herbs if parsley is not available, such as chives or cilantro, according to taste.
- Watch the lobster carefully as it grills to avoid overcooking, which can make the meat tough.
