Ingredients
Marinade and Salmon:
- Juice and zest of 1/2 lemon (1 tablespoon juice + ½ teaspoon zest)
- 1 tablespoon avocado oil or olive oil
- 2 teaspoons honey
- ½ teaspoon garlic powder
- ¼ teaspoon fine salt
- ⅛ teaspoon black pepper
- 20 to 24 ounces skin-on salmon fillets (3-4 fillets)
- 2 lemons, sliced into thin rounds
- 4 large/long wooden or metal skewers
Curry Yogurt Sauce:
- ½ cup plain Greek yogurt (or plain skyr)
- 2 tablespoons lemon juice (½ medium lemon)
- 2 tablespoons chopped fresh cilantro, plus more for garnish
- ½ teaspoon curry powder
- ¼ teaspoon fine salt
- 1 pinch smoked paprika (optional)
Instructions
- Prepare Marinade: In a small bowl, combine the lemon juice, lemon zest, oil, honey, garlic powder, salt, and pepper with a fork. Set aside.
- Marinate Salmon: Pat the salmon fillets dry with paper towels. Cut each fillet into 5-6 equal-sized 1-inch cubes and place in a shallow dish. Pour the marinade over the salmon pieces and gently toss to coat. Let marinate while preheating grill and preparing sauce, about 10-15 minutes.
- Preheat Grill: Heat the grill to medium-high, approximately 400°F.
- Make Curry Yogurt Sauce: In a bowl, whisk together yogurt, lemon juice, chopped cilantro, curry powder, salt, and smoked paprika if using, until smooth. If too thick, add 1-2 tablespoons water and whisk again. Refrigerate until ready to serve.
- Assemble Kebabs: Thread salmon cubes and folded lemon slices alternately onto skewers.
- Grill Kebabs: Place skewers on grill grate over indirect heat. Cook for 5 minutes, then flip and cook another 3-4 minutes or until salmon flakes easily with a fork.
- Serve: Remove kebabs from grill, drizzle with curry yogurt sauce, and garnish with additional chopped cilantro.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- Ensure salmon pieces are cut evenly for consistent cooking.
- Adjust curry powder amount in the yogurt sauce to taste for more or less spice.
- Serve with a side of grilled vegetables or a fresh salad for a complete meal.
- Can be cooked on a stovetop grill pan if outdoor grilling is unavailable.
