Ingredients

Sweet Potatoes

  • 3 medium sweet potatoes

Seasoning & Oil

  • 2 Tbsp extra virgin olive oil

  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the grill. Turn on your grill to medium heat to allow it to warm up while you prepare the sweet potatoes.
  2. Prepare the sweet potatoes. Wash and peel the sweet potatoes, then cut each in half lengthwise followed by slicing into evenly sized pieces to ensure consistent cooking.
  3. Arrange on foil. Divide the sweet potato slices evenly onto two large pieces of aluminum foil to prepare for seasoning and grilling.
  4. Season the sweet potatoes. Drizzle the olive oil over the slices, then sprinkle crushed rosemary, onion powder, salt, and black pepper on top. Mix gently with your hands or a spoon directly on the foil to evenly coat the potatoes with the seasonings.
  5. Wrap securely. Fold and wrap the potatoes tightly with two layers of aluminum foil each, roughly 12x15 inches in size, to seal in moisture and flavor during grilling.
