For the Biscuit Topping:
- 2 cups all-purpose flour, spooned and leveled
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 6 tablespoons salted butter, cold
- ¾ cup buttermilk
- ½ cup cheddar cheese, shredded
Instructions
- Preheat and Prepare: Preheat your oven to 400°F (200°C) and lightly grease a 9 x 13 inch baking dish. Set this aside for later use.
- Cook the Beef: In a large skillet over medium heat, heat the olive oil. Add the ground beef and cook it until browned, breaking it apart as it cooks. Drain any excess fat if necessary.
- Sauté Vegetables: Add the diced onion and minced garlic to the skillet and cook for about 2 minutes until fragrant. Then, stir in the diced carrots and potatoes and cook for another 3 minutes, allowing some caramelization to develop for added flavor.

- Thicken the Filling: Sprinkle the all-purpose flour evenly over the mixture and stir to coat. Slowly pour in the beef broth while stirring continuously. Let the mixture simmer for about 5 minutes until it thickens. Finally, stir in the frozen peas and remove from heat.
- Assemble Filling: Transfer the prepared beef and vegetable filling into the greased baking dish and spread it evenly.
- Make Biscuit Topping: In a medium bowl, whisk together the flour, baking powder, and baking soda. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs or flakes. Pour in the buttermilk and stir just until the dough comes together, being careful not to overmix.
- Shape Biscuits: Gently form the biscuit dough into a ball, then roll it out to your desired thickness on a floured surface. Use a floured biscuit cutter to cut out 6 to 8 biscuits. Place these over the beef filling in the baking dish, leaving small gaps to let steam escape.
- Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the biscuit tops.
- Bake: Bake the pot pie in the preheated oven for 25 to 30 minutes, or until the biscuits are golden brown and cooked through.
