- 1 tablespoon salted butter
- 1 store bought rotisserie chicken, skin removed and meat pulled/shredded into pieces
- 20 ounce package of Simply Potatoes Shredded Hash Browns
Vegetables & Aromatics
- ½ cup yellow onion, diced small
- ½ cup red bell pepper, diced small
- 1 garlic clove, minced
- 1 jalapeño, seeds removed and minced (divided)
Dairy & Cheese
- 1 cup sour cream
- 10 ounce can of Campbell's Cheddar Cheese Soup
- 8 ounce block of cheddar cheese, shredded (approximately 2 cups)
Spices
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- 1 teaspoon salt
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 400 degrees Fahrenheit. Grease a 9x13-inch casserole dish with butter or cooking spray to prevent sticking during baking.
- Mix Ingredients: In a large mixing bowl, combine the shredded hash browns, pulled rotisserie chicken, diced red bell pepper, diced onion, minced garlic, and half of the diced jalapeño. Add in the sour cream, cheddar cheese soup, 1 cup of shredded cheddar cheese, cumin, chili powder, paprika, garlic powder, and salt. Stir everything together until the mixture is thoroughly combined.
- Assemble Casserole: Spoon the chicken and hash brown mixture evenly into the prepared casserole dish. Sprinkle the remaining shredded cheddar cheese and the rest of the minced jalapeño evenly over the top.
- Bake Covered: Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes to allow the flavors to meld and the casserole to heat through.
- Uncover and Continue Baking: Remove the foil and bake, uncovered, for an additional 10 minutes. This step helps to brown the top and cook off moisture.
- Broil for Crispiness (Optional): For a crispy, golden topping, set your oven to high broil and broil the casserole for 3-5 minutes. Watch carefully to prevent burning.
- Cool and Serve: Let the casserole cool for a few minutes after baking. Cut into squares and serve warm. Optionally, add a dollop of sour cream on top of each serving for extra creaminess and tang.
Notes
- Shred cheese from a block for better melting and texture instead of using pre-shredded cheese.
- Dice onions and peppers finely to ensure they cook fully in the casserole and blend well with other ingredients.
- Broiling the casserole at the end adds a delicious crispy topping but be sure to watch closely to avoid burning.
