Ingredients

Salmon and Marinade

  • 4 Salmon Filets
  • 1 container pre-cored pineapple, sliced into rings (reserve juice for marinade)
  • 1/2 cup low sodium soy sauce
  • 2 garlic cloves, minced
  • 3 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon ginger (ground or fresh)
  • 1 teaspoon oregano
  • 1 teaspoon crushed red pepper
  • 3 tablespoons pineapple juice (or orange juice as substitute)

Garnish

  • Fresh green onion, chopped
  • Fresh cilantro or parsley, chopped

Instructions

  1. Prepare the marinade: In a large mixing bowl or ziplock bag, combine soy sauce, minced garlic, brown sugar, ketchup, ginger, oregano, crushed red pepper, and pineapple juice. Mix well until sugar dissolves.
  2. Marinate the salmon: Add the salmon filets to the marinade and gently coat each piece evenly. Refrigerate and allow to marinate for 20 minutes to absorb flavors.
  3. Preheat the grill: Remove salmon from fridge and let come to room temperature while preparing the grill. Spray grill grate with non-stick cooking spray or brush with olive oil and heat to medium-high.
  4. Grill the salmon and pineapple: Place salmon filets and pineapple rings on the grill. Use a brush to baste additional marinade over the salmon as it cooks.
  5. Cook the salmon: Close the grill and grill the salmon for 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C). You may flip each side or cook skin side down for 13-15 minutes without flipping. Remove salmon and pineapple once done.
  6. Plate and garnish: Arrange salmon filets on a platter. Garnish with chopped fresh green onions and cilantro or parsley. Serve pineapple rings alongside for guests to add as desired.

Notes

  • Grilling both sides of the salmon is optional; if not flipping, grill skin side down for 13-15 minutes to reach proper doneness.
  • Keep some marinade aside to brush on salmon and pineapple while grilling to enhance flavor and moisture.
  • Fresh ginger can be used instead of ground ginger for a brighter, more aromatic flavor.
