Ingredients
Brownie Batter
- 1¾ cups white sugar
- ¼ tsp salt
- 1 tsp vanilla extract
- ½ cup unflavoured oil
- ½ cup butter, melted
- 4 eggs, room temperature
- 1 cup all-purpose flour
- ⅔ cup cocoa powder
- ½ tsp baking powder
- 125g Whittakers Hazella Chocolate, broken into squares
Chocolate Drizzle
- 50g Whittakers Hazella Chocolate
- 2 tsp oil
Toppings
- Vanilla ice cream
- Toasted chopped hazelnuts
Instructions
- Preheat the oven: Set your oven to 180°C fan bake to ensure even cooking for the brownies.
- Prepare the baking tray: Line a 26 x 32 cm tray with baking paper to prevent sticking and make removal easier.
- Mix wet ingredients: In a large bowl, combine the sugar, salt, vanilla extract, unflavoured oil, and melted butter. Add the eggs and whisk thoroughly until the mixture is smooth and homogenous.
- Add dry ingredients: Sift together the flour, cocoa powder, and baking powder into the wet mixture. Stir gently until the batter is smooth and silky without lumps.
- Add chocolate chunks: Fold in the 125g of broken Whittakers Hazella Chocolate pieces, distributing them evenly throughout the batter.
- Bake the brownies: Pour the batter into the prepared tray and spread it evenly. Bake for 25-30 minutes or until the center bounces back when lightly touched. Remove from the oven and allow to cool for 30 minutes.
- Prepare the chocolate drizzle (optional): Gently melt the extra 50g of chocolate in a small bowl by microwaving for 10 seconds at a time, stirring in between, then add 2 teaspoons of oil to achieve a drizzling consistency.
- Serve the Sundae: Slice the cooled brownies into pieces. Serve warm topped with vanilla ice cream, drizzle with the melted chocolate mixture, and sprinkle with toasted chopped hazelnuts for a crunchy finish.
Notes
- Ensure eggs are at room temperature to help the batter mix smoothly and produce a tender crumb.
- Do not overbake the brownies; they should be moist and slightly fudgy in the center.
- The optional chocolate drizzle adds an extra layer of richness but can be skipped if preferred.
- For an added nutty flavor, you can fold some toasted hazelnuts into the batter before baking.
- Store leftover brownies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
