Ingredients
Sweet Potato Fries
- 2 pounds sweet potatoes (about 1.25 pounds peeled and cut into fry shapes)
- 2 tbsp extra virgin olive oil
- 1 tbsp cornstarch
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp salt
- Parsley (optional garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and evenly spray a baking sheet with pan spray to prevent sticking.
- Prepare Sweet Potatoes: Wash and peel the sweet potatoes, then cut them into 1/4 inch strips so they resemble fries.
- Soak Fries: Place the cut sweet potatoes in a large bowl filled with cold water and let them soak for 30 minutes. This step helps remove excess starch for crispier fries.
- Drain and Dry: Drain the sweet potatoes using a strainer, then pat them thoroughly dry with paper towels to remove all moisture.
- Coat with Olive Oil: Put the dried sweet potatoes into a zip-lock bag, add the olive oil, and shake or mix until all fries are evenly coated.
- Mix Seasoning: In a separate bowl, combine cornstarch, paprika, black pepper, onion powder, garlic powder, and salt.
- Season Fries: Add the cornstarch and spice mixture into the zip-lock bag with the fries, then seal and gently shake to coat the fries evenly with the seasoning.
- Arrange on Baking Sheet: Spread the seasoned sweet potato fries on the prepared baking sheet in a single layer, close together but not touching, to ensure crispiness and prevent sogginess.
- Bake Fries: Bake for 15 minutes, then carefully flip the fries to ensure even cooking, and bake for an additional 10 minutes for a total baking time of 25 minutes.
- Rest Before Serving: Remove the fries from the oven and let them rest on the baking sheet for 3 minutes to firm up.
- Serve: Garnish with parsley if desired, and serve immediately while hot for best texture and flavor.
Notes
- Soaking the sweet potatoes in cold water helps remove excess starch which results in crispier fries.
- Ensure the fries are completely dry before coating to avoid sogginess.
- Do not overcrowd the baking sheet; fries should be close but not touching.
- Flipping halfway through baking ensures even crisping on all sides.
- Serving immediately after resting yields the best texture.
- Optional parsley garnish adds a fresh touch and color contrast.
