- 1 teaspoon ground cinnamon
- 1 1/4 cup (150g) white whole wheat flour

Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ºF (176ºC) and lightly grease a 9 x 5-inch loaf pan to prevent sticking.
- Mix Wet Ingredients: In a large mixing bowl, lightly beat the eggs until the yolks break apart. Whisk in the Greek yogurt, mashed bananas, maple syrup, brown sugar, and vanilla extract until you achieve a smooth mixture.
- Add Dry Ingredients: Stir in the quick oats, baking soda, and ground cinnamon. Then gently fold in the white whole wheat flour until just combined to avoid overmixing.
- Incorporate Optional Add-ins: If using chocolate chips, dried fruit, or nuts, toss them with about 1 tablespoon of flour to prevent sinking, then gently fold into the batter.
- Fill Pan and Add Toppings: Pour the batter evenly into the prepared loaf pan. For a decorative touch, sprinkle additional chocolate chips on top if using.
- Bake the Bread: Bake in the preheated oven for approximately 45 minutes. After 30 minutes, loosely cover the loaf with aluminum foil to prevent excessive browning on the top and sides.
- Cool and Store: Remove the banana bread from the oven and allow it to cool completely in the pan placed on a wire rack. Store covered at room temperature for up to 2 days or refrigerate for up to 1 week. For best flavor, enjoy on day 2 when the flavors have melded. To freeze, wrap tightly and store up to 3 months.
