- 1 clove garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp red pepper flakes
- 1 tsp sea salt
- ½ tsp ground black pepper
- ¼ cup cilantro, chopped
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts (6-8 oz. each)
For the Fajita Bell Peppers:
- 1 white onion, thinly sliced
- 1 poblano chile, thinly sliced
- 2 red bell peppers, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 tsp sea salt
- ½ tsp ground black pepper
- ¼ teaspoon garlic powder
For the Lime & Cilantro Black Beans:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ½ jalapeño (about 1 tbsp), seeded and finely diced
- ½ teaspoon cumin
- 2 (15-ounce) cans low sodium black beans, rinsed and drained
- 1 cup low-sodium chicken broth
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- 1 tsp sea salt
Instructions
- Marinate the Chicken: In a large bowl or ziplock bag, combine the chicken breasts with freshly squeezed lime juice, pineapple juice (no sugar added), low sodium soy sauce, 2 tablespoons olive oil, minced garlic, ground cumin, paprika, red pepper flakes, sea salt, ground black pepper, and chopped fresh cilantro. Mix well to coat all pieces. Refrigerate for a minimum of 30 minutes and up to 8 hours to allow flavors to meld.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until hot. Remove chicken from marinade, letting excess drip off, and add to the skillet. Cook the chicken breast for 4-6 minutes per side, or until fully cooked through and internal temperature reaches 165°F (74°C). Remove from heat and set aside to rest before thinly slicing.
- Cook the Fajita Bell Peppers: In the same skillet, add the sliced white onion, poblano chile, red and green bell peppers, sea salt, ground black pepper, and garlic powder. Sauté over medium-high heat, tossing frequently until the vegetables are tender and slightly caramelized, about 4-6 minutes. Remove from heat and set aside.
- Prepare the Lime & Cilantro Black Beans: Heat 1 tablespoon olive oil in a large saucepan over medium-high heat. Add minced garlic, diced jalapeño, and cumin; cook for about 1 minute until the garlic is fragrant. Stir in the rinsed black beans and chicken broth. Cook for 5 minutes, stirring occasionally. Using a potato masher, coarsely mash the beans until some texture remains. Continue to simmer the mixture, stirring frequently, until it thickens, about 8-10 minutes. Remove from heat and stir in fresh lime juice, chopped cilantro, and sea salt to taste.
- Assemble the Meal Prep: In your meal prep containers, layer the prepared lime cilantro black beans first, then add the sliced fajita chicken, and top with the sautéed bell pepper and onion mixture. Seal containers and refrigerate for up to 4 days. Reheat and enjoy your healthy, flavorful chicken fajita meal.
