It's easy to prepare on the stovetop and can be customized with your favorite toppings like avocado, sour cream, shredded cheese, and fresh herbs.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 Tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 Tablespoons fresh garlic, minced
  • 1 lb lean ground turkey (99% lean)
  • 1 teaspoon sea salt
  • ½ teaspoon pepper
  • 1 ½ cups chicken broth or vegetable stock
  • 1 28-ounce can diced or crushed tomatoes
  • 1 15-ounce can red kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 ½ cups frozen sweet corn

Spices

  • 2 ½ Tablespoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ¼ to ½ teaspoon cayenne pepper (adjust to taste)

Toppings (Optional)

  • Avocado slices
  • Sour cream or yogurt
  • Shredded cheese
  • Cilantro
  • Green onion

Instructions

  1. Sauté veggies: Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and minced garlic, cooking while stirring frequently until the onion is translucent and the mixture is fragrant.
  2. Cook turkey: Add the ground turkey to the pot along with sea salt and pepper. Break the meat apart with a spatula and cook until evenly browned and fully cooked through.
  3. Simmer chili: Pour in the chicken broth or vegetable stock. Stir in the diced or crushed tomatoes, drained kidney beans, black beans, frozen sweet corn, chili powder, paprika, cumin, oregano, and cayenne pepper. Bring the chili to a boil, then reduce heat to low. Cover the pot and let it simmer gently for 20 minutes to allow the flavors to meld.
  4. Serve: Ladle the chili warm into bowls and garnish with your choice of toppings such as avocado slices, sour cream or yogurt, shredded cheese, cilantro, and green onion.

Notes

  • Use lean ground turkey (99% lean) to keep the chili healthy and low fat.
  • Adjust the cayenne pepper to control the heat level according to your preference.
  • Simmering the chili allows the flavors to develop fully and the beans and corn to heat through thoroughly.
  • This chili is great for meal prep and tastes even better the next day.
  • For a vegetarian version, substitute ground turkey with plant-based protein and use vegetable stock.
