Ingredients

For the Churros:

  • 240ml water
  • 60g unsalted butter

  • 80g granulated sugar
  • 1 teaspoon ground cinnamon (adjust to taste)

For the Ganache:

  • 150g milk chocolate, chopped
  • 80ml double cream

Instructions

  1. Prepare the churro dough: In a pot, combine the water, unsalted butter, sugar, and salt. Heat over medium heat until the butter melts and the mixture comes to a boil. Remove from heat, add the plain flour, and stir vigorously until a smooth dough forms.
  2. Cook the dough: Return the pot to medium heat and cook the dough while continuously stirring for 2 minutes to remove excess moisture. Transfer the dough to a large bowl and allow it to cool for 10 minutes.
  3. Add the egg: After cooling, incorporate the egg into the dough and mix until it becomes smooth and glossy. Transfer the dough into a piping bag fitted with a medium-sized star tip.
  4. Shape the churros: Cut baking paper into squares. Pipe heart-shaped churros onto each square, then set aside until ready to fry.
  5. Heat the oil: Pour flavourless oil into a pot and heat it to a temperature between 180°C and 190°C for frying.
  6. Fry the churros: Gently place a baking paper square with churros into the hot oil. After a few seconds, the churros will separate from the paper; remove the paper with tongs. Fry the churros until they are deep golden brown on both sides. Drain and transfer to a wire rack.
  7. Coat with cinnamon sugar: Mix granulated sugar and ground cinnamon in a bowl. While the churros are still warm, toss them in the cinnamon sugar mixture to coat evenly.
  8. Make the ganache: Combine chopped milk chocolate and double cream in a microwave-safe bowl or jug. Heat in 30-second increments, stirring between each, until the chocolate is fully melted and the ganache is smooth.
