Instructions

  1. Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the chopped garlic and cook for an additional 1 minute until fragrant.
  2. Brown the Beef: Add the cubed beef chuck to the pot along with 1 teaspoon of salt. Brown the beef on all sides for 5 to 7 minutes to develop flavor. Stir in the tomato paste and cook for 1 minute to deepen the taste.
  3. Add Liquids and Herbs: Pour in the beef broth and red wine. Add the dried oregano, fresh thyme sprig, and bay leaf. Stir everything together, then cover the pot and reduce heat to low. Let it simmer gently until the beef is tender, approximately 1 1/2 hours.
  4. Cook the Pumpkin: Remove the lid, add the cubed pumpkin or squash to the pot. Cover again and cook for an additional 30 to 35 minutes until the pumpkin is tender and easily pierced with a fork.
