Ingredients
Egg Mixture
- 12 eggs
- 3/4 cup cottage cheese
- 1/2 teaspoon salt
- Pinch of pepper
Sausage and Veggies
- 1 pound turkey or chicken breakfast sausage
- 1 tablespoon olive oil
- 1 bell pepper, chopped
- 1/2 onion, chopped
- 2 cups fresh spinach
- 1 1/2 cups frozen diced potatoes
- 1 cup black beans
Assembly
- 8 burrito-sized tortillas
- 1 cup shredded cheddar cheese

Instructions
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined. Set aside to use later in cooking.
- Cook Sausage: In a large skillet over medium heat, sauté the breakfast sausage until fully cooked through. Once cooked, transfer the sausage to a plate and set aside.
- Sauté Vegetables: Using the same skillet, heat the olive oil. Add the chopped bell pepper and onion, sprinkle with a little salt, and cook for 4-5 minutes until softened and fragrant.
- Add Potatoes and Spinach: Add the frozen diced potatoes to the skillet and cook for a few minutes until heated through. Then stir in the fresh spinach and cook until wilted. Add in the black beans and stir to combine all the veggies together.
- Scramble Eggs with Veggies: Pour the prepared egg mixture into the skillet with the vegetable mixture. Cook over medium heat, stirring occasionally, until the eggs are scrambled and fully cooked.
- Assemble Burritos: Lay out the tortillas on a clean surface. Divide the scrambled egg and veggie mixture evenly among the tortillas. Top each with cooked sausage and a sprinkle of shredded cheddar cheese.
- Roll Burritos: Fold up the bottom half of each tortilla over the fillings, then fold in the sides towards the middle. Roll tightly to form a burrito.
- Optional - Crisp Burritos: For a warm, golden finish, heat a bit of olive oil in a skillet over medium heat. Place 1-2 burritos seam side down and cook for 2-3 minutes per side, or until the tortilla is crisp and golden brown.
- Serve: Garnish burritos with chopped cilantro and serve with salsa, guacamole, and sour cream on the side as desired.
Notes
- For a vegetarian version, omit sausage and increase the amount of beans or add tofu.
- Use whole wheat or gluten-free tortillas if preferred.
- To save time, cook the potatoes ahead or use fresh diced potatoes instead of frozen.
- Adjust seasoning with extra salt or pepper as needed during cooking.
- The optional crisping step adds texture but can be skipped for a softer burrito.
