Ingredients
Chicken
- 1.4 lbs boneless skinless chicken breasts (or 1 lb cooked rotisserie chicken)
- 2 teaspoons chicken seasoning (or salt)
Dressing
- 1/2 cup mayonnaise (store-bought or homemade)
- 1 cup cottage cheese
- 1 tablespoon fresh lemon juice
Add-ins
- 65 g grapes, quartered (about 24 grapes, any color)
- 2 celery ribs, chopped
Spices
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- Ground black pepper, to taste
- Salt, to taste
Instructions
- Cook the chicken: Season the chicken breasts with chicken seasoning or salt. Boil them in a covered pot on the stovetop for about 20 minutes until cooked through and tender. Alternatively, use pre-cooked rotisserie chicken or cook chicken in an Instant Pot.
- Prepare the creamy dressing: While the chicken cooks, blend together the cottage cheese and mayonnaise until smooth and creamy using a blender, food processor, or immersion blender.
- Shred the chicken: Remove the cooked chicken from the pot and place in a large bowl. Use two forks to shred the chicken finely for a pleasant texture.
- Mix the salad: Add the cottage cheese and mayo mixture, quartered grapes, chopped celery, lemon juice, dried oregano, garlic powder, smoked paprika, and onion powder to the shredded chicken. Mix everything well to combine all flavors evenly.
- Season to taste: Add ground black pepper and salt as needed. Adjust seasoning carefully and blend again if necessary to balance flavors.
- Chill and serve: Refrigerate the salad for a couple of hours to allow flavors to meld if possible. Serve chilled or immediately as preferred. Enjoy it with wraps, crackers, or fresh fruit.
