This High Protein Cottage Cheese Queso is a creamy, flavorful dip perfect for game days, movie nights, or healthy snacking. Combining protein-rich cottage cheese with zesty taco seasoning, melted pepper jack cheese, and a spicy kick from pickled jalapenos, it’s delicious served warm with chips and fresh veggies. Topped with pico de gallo and cilantro, this dip offers a balanced, satisfying flavor with a smooth texture.

  • Total Time: 6 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 cup 2% cottage cheese
  • 1 tablespoon low sodium taco seasoning (see notes)
  • ¼ cup pepper jack cheese, shredded
  • 1 tablespoon pickled jalapenos (about 2 slices)
  • 1 tablespoon water (if needed for blending)

Toppings

  • Pico de gallo (chopped tomatoes, peppers, onion)
  • Fresh cilantro

Instructions

  1. Blend Ingredients: Add the cottage cheese, low sodium taco seasoning, shredded pepper jack cheese, and pickled jalapenos into a high-powered blender or food processor. Blend on high until smooth. If the mixture is too thick to blend, add 1 tablespoon of water to help.
  2. Heat the Queso: Pour the blended mixture into a microwave-safe dish. Microwave in 30-second increments for a total of 1 minute or until the queso is warm, stirring well after heating.
  3. Add Toppings and Serve: Remove from the microwave and stir to combine. Top with pico de gallo, diced tomatoes, peppers or onions, and fresh cilantro as desired. Serve immediately with chips or vegetables.

Notes

  • For homemade taco seasoning, mix: 1 tablespoon chili powder, 1.5 teaspoons ground cumin, 1 teaspoon salt, 1 teaspoon black pepper, ½ teaspoon paprika, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon red pepper flakes, and ¼ teaspoon dried oregano.
  • Pepper jack cheese may be substituted with standard cheddar cheese; add a pinch of additional chili powder to increase spiciness.
  • Using freshly diced jalapenos instead of pickled requires only ½ tablespoon, ensuring seeds are removed to reduce heat.
  • If the dip begins to separate when microwaving, reduce microwave power or heat in 15-second intervals to prevent overheating.
  • Shredding your own cheese rather than using pre-shredded cheese helps with better melting consistency.
