- 1 lb ground pork
- 1 lb ground chicken
- 1 tbsp fresh thyme, minced
- 1 tsp dried sage
- 1 tsp salt
- 1/2 tsp black pepper
- 1/8 tsp cayenne pepper

- 2 tbsp maple syrup
- 2 tbsp olive oil, divided
Instructions
- Combine Ingredients: In a large mixing bowl, combine the ground pork, ground chicken, maple syrup, minced thyme, dried sage, salt, black pepper, and cayenne pepper.
- Mix Thoroughly: Use your hands to thoroughly mix all the ingredients together until they are well incorporated into a uniform mixture.
- Form Patties: Shape the sausage mixture into 16 evenly sized patties. Place each patty on a cookie sheet lined with parchment or wax paper to prevent sticking.
- Heat Oil: Warm 1 tablespoon of olive oil in a large skillet over medium heat to prepare for cooking the patties.
- Cook First Batch: Add 8 sausage patties to the skillet, spacing them apart. Cook each side for 3-4 minutes or until golden brown and cooked thoroughly.
- Remove and Set Aside: Once cooked, remove the patties from the skillet and place them on a plate or tray to keep warm.
- Cook Second Batch: Add the remaining 1 tablespoon of olive oil to the skillet, then add the remaining 8 patties. Cook them as before for 3-4 minutes per side until cooked through.
Notes
- Ensure the patties are cooked to an internal temperature of 165°F (74°C) for safety.
- You can substitute ground turkey for chicken if preferred.
- For a spicier variation, increase the cayenne pepper slightly.
- Maple syrup adds a subtle sweetness balancing the herbs and spices well.
- Use fresh herbs when possible for optimal flavor.
- These patties can be made ahead and refrigerated or frozen for later use.
