Ingredients
Chai Concentrate
- 6 cups water
- 4 to 6 tablespoons honey
- 2 tablespoons dried ginger pieces
- 5 cinnamon sticks
- 2 to 3 star anise pods
- 1 teaspoon whole cloves
- ½ teaspoon allspice berries
- 1 heaping tablespoon green cardamom pods
- 1 teaspoon whole black peppercorns (optional)
- 4 tablespoons loose-leaf black tea OR 5 black tea bags
- 1 tablespoon vanilla extract or vanilla bean paste OR 1 whole vanilla bean, split
For Serving
- Milk of your choice (whole, soy, almond, oat, etc.)
Instructions
- Simmer Spices: In a medium saucepan, combine the water, honey, dried ginger pieces, cinnamon sticks, star anise pods, whole cloves, allspice berries, green cardamom pods, and whole black peppercorns (if using). Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and let it simmer uncovered for 20 minutes to infuse the water with the spices' flavors.
- Add Tea and Steep: Remove the saucepan from heat and add the loose-leaf black tea or tea bags. Let the tea steep in the hot spiced water for 5 minutes to extract a robust tea flavor.
- Strain Concentrate: Pour the mixture through a fine mesh sieve into a clean container to remove all the whole spices and tea leaves or bags. Stir in the vanilla extract or vanilla bean paste to enhance the aroma and flavor.
- Cool and Store: Allow the chai concentrate to cool to room temperature, then transfer it into an airtight container. Store it in the refrigerator where it will keep fresh for 1 to 2 weeks.
- Serve: To enjoy, mix 1 to 2 parts chai concentrate with 1 part milk of your choice. For a hot chai latte, warm the concentrate and milk separately. Use a milk frother to froth the milk before pouring it over the concentrate. For an iced chai, combine the concentrate and milk over ice cubes for a refreshing drink.
Notes
- Adjust the amount of honey to your preferred sweetness.
- Black peppercorns are optional but add a subtle spicy warmth to the chai.
- If using a whole vanilla bean, split the bean and add it along with the spices during simmering, then strain out before adding the tea.
- This concentrate can be stored refrigerated in an airtight container for up to two weeks.
