  • 1/2 cup (8 Tbsp; 113g) unsalted butter, cubed and very cold
  • 1 cup + 2 Tablespoons (270ml/g) cold buttermilk, divided
  • 2 teaspoons (14g) honey

  • 2 Tablespoons (28g) butter, melted
  • 1 Tablespoon (21g) honey

Instructions

  1. Preheat Oven: Set your oven to 425°F (218°C) to ensure it's fully heated by the time your biscuits are ready to bake.
  2. Combine Dry Ingredients: In a large bowl or food processor, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly mixed.
  3. Cut in Butter: Add the very cold, cubed butter to the dry mixture. Using a pastry cutter or pulsing in the food processor, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces.
  4. Add Buttermilk and Honey: If using a food processor, transfer the mixture to a bowl. Make a well in the center, pour in 1 cup of cold buttermilk, and drizzle the honey on top. Fold gently with a spoon or spatula until just starting to come together; the dough will be shaggy and a bit wet in places—do not overmix.
  5. Form and Fold Dough: Pour the dough onto a floured surface. Using floured hands, gently bring it together, keeping it sticky but manageable. Flatten into a 3/4-inch-thick rectangle and fold one side toward the center, then fold the other side on top. Rotate the dough 90 degrees and repeat this folding and flattening process three more times, each time creating a 3/4-inch-thick rectangle. This folding builds layers for flakiness.
  6. Cut Biscuits: Using a 2.5- or 3-inch biscuit cutter, cut circles from the dough without twisting the cutter to prevent sealed edges that impede rising. Re-roll scraps as needed to use all dough, yielding about 8–11 biscuits.
  7. Arrange Biscuits: Place the biscuits snugly together in a 10-inch cast iron skillet (greased if not well seasoned) or on a parchment-lined baking sheet, ensuring they are touching to help them rise tall and fluffy.
