Ingredients
Dry Ingredients
- 1 1/2 cups organic all-purpose flour
- 1/2 cup organic cane sugar
- 2 tsps baking powder
- 1/2 tsp ground cinnamon (optional)
- 1/2 tsp sea salt
Wet Ingredients
- 2 large organic eggs, at room temperature
- 1 cup almond milk
- 2 tsps vanilla extract
- 1/4 cup vegetable oil
Coating
- 1-2 cups organic powdered sugar
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and spray a mini donut baking pan with non-stick spray. This pan has 6 wells but you can use a standard donut pan if desired.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, cinnamon (if using), and sea salt until well combined.
- Add Wet Ingredients: Add the eggs, almond milk, vanilla extract, and vegetable oil to the dry ingredients. Mix with a wooden spoon until the batter is thick, smooth, and fully combined, about 1 to 2 minutes.
- Fill Donut Pan: Transfer the batter into a piping bag for easier handling. Pipe the batter into each donut well, filling them about 3/4 full to allow room for rising.
- Bake the Donuts: Bake in the preheated oven for 11 to 13 minutes or until a toothpick inserted into the donuts comes out clean, indicating they are cooked through.
- Prepare Coating: While the donuts bake, place the powdered sugar in a large ziplock bag for coating.
- Cool and Coat: Remove the donuts from the oven and let them cool for 5 minutes in the pan before gently releasing them.
- First Sugar Coat: Immediately toss the warm donuts in the ziplock bag with powdered sugar to coat.
- Cool Completely: Place the powdered sugar-coated donuts on a wire cooling rack to cool completely.
- Second Sugar Coat: Once cooled, toss the donuts again in the powdered sugar for a second, thicker coating.
- Repeat: Continue this process until all donuts have been coated twice.
- Serve: Enjoy these fresh, light, and sweet mini powdered sugar donuts with your favorite coffee or tea. Bon Appetit!
Notes
- Donuts are best eaten fresh but can be stored in an airtight container for up to 2 days.
- For a dairy alternative, almond milk works beautifully, but any plant-based or regular milk can be used.
- Using a piping bag helps fill the donut molds evenly and neatly.
- Be careful not to overfill the donut wells to avoid overflow during baking.
- If you want a richer flavor, sprinkle a little cinnamon sugar instead of plain powdered sugar.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
