Ingredients

Toaster Strudels

  • 1 lb puff pastry (2 sheets), thawed according to instructions
  • 1½ cups frozen raspberries
  • ½ cup granulated sugar, plus more for sprinkling
  • 1 tbsp fresh lemon juice
  • 1 tbsp cornstarch
  • 1 egg, beaten
  • 2 tbsp milk
  • All-purpose flour, for sprinkling

Glaze

  • ½ cup confectioner’s sugar
  • 2 tbsp milk or half & half
  • 1 tsp pure vanilla extract

Instructions

  1. Prepare Raspberry Filling: In a small pot over medium heat, combine frozen raspberries, granulated sugar, lemon juice, and cornstarch. Bring to a boil, then reduce to a simmer, stirring until thickened. Remove from heat and cool completely for about 5-10 minutes.
  2. Preheat and Prepare Pastry: Preheat oven to 400˚F. Line two baking sheets with parchment paper. Sprinkle flour on a clean surface and lightly roll thawed puff pastry sheets. Cut each into 6 equal rectangles.
  3. Assemble Strudels: Mix 1 egg with 1 tbsp milk to make egg wash. Brush edges of 6 pastry rectangles with egg wash. Evenly spoon raspberry filling onto these rectangles.
  4. Seal Strudels: Place remaining six rectangles on top of those with filling. Press edges lightly, then crimp with a fork to seal. Repeat for all strudels.
  5. Prepare for Baking: Transfer assembled strudels to baking sheets. Cut 2-3 small slits on top of each to allow steam to escape. Brush tops with egg wash and sprinkle with sugar.
  6. Bake: Bake strudels for 20-22 minutes until golden and puffed.
  7. Make Glaze: While baking, mix confectioner’s sugar, milk or half & half, and vanilla extract until smooth. Microwave for 5-10 seconds if a thinner glaze is desired.
  8. Finish and Serve: Remove strudels from oven and cool 5-10 minutes. While warm, drizzle glaze over the strudels. Serve and enjoy!
