Ingredients
For the Dough:
- 1 cup all-purpose flour
- 1/4 cup sourdough starter
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter, cut into cubes
- 2-3 tablespoons cold water (as needed)
For the Filling:
- Your favorite jam, jelly, or other filling (approximately 1/4 cup total)
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1 beaten egg (for brushing)
Instructions
- Make the Dough: In a bowl, combine the flour, sourdough starter, sugar, and salt. Cut in the cold unsalted butter using a pastry cutter or fingers until the mixture resembles coarse crumbs. Gradually add 2 to 3 tablespoons of cold water, mixing until a dough forms. Knead the dough briefly, wrap it tightly in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Roll Out and Fill: On a lightly floured surface, roll the chilled dough out to about 1/8-inch thickness. Cut the dough into squares of desired size, typically around 3x3 inches. Place a spoonful of your chosen jam filling on half of each square, leaving borders. Fold the dough over the filling to create a pocket and seal the edges firmly by pressing with a fork to prevent leaking during baking.
- Bake: Preheat your oven to 400°F (200°C). Arrange the Pop Tarts on a parchment-lined baking sheet. Lightly brush the tops with the beaten egg to encourage browning. Bake for 10-12 minutes or until the Pop Tarts turn golden brown and are crisp.
- Make the Glaze: While the Pop Tarts bake or cool, whisk together the powdered sugar and 2-3 tablespoons of milk until you achieve a smooth, pourable glaze consistency.
- Glaze and Serve: Once the Pop Tarts have cooled slightly, drizzle the glaze generously over the tops. Allow the glaze to set briefly before serving. Enjoy warm or at room temperature.
Notes
- Use sourdough discard instead of throwing it away to add a tangy flavor to your pastry.
- Make sure butter is cold to create a flaky crust.
- Seal edges well to prevent filling from spilling during baking.
- Customize fillings with any jam or preserve of your choice.
- The glaze can be thickened or thinned by adjusting sugar or milk amounts.
- For a dairy-free glaze, substitute milk with almond or oat milk.
- Chilling the dough is important for easier rolling and better texture.
