Chicken
- 3 lbs boneless skinless chicken thighs (8 thighs)
- ½ tsp sea salt
Marinade
- 1 ½ Tbsp avocado oil
- ⅓ cup honey
- ¼ cup fresh lemon juice
- 1 Tbsp liquid aminos or soy sauce
- 2 Tbsp rice vinegar
- 5 cloves garlic, minced
- ½ tsp black pepper
Instructions
- Preheat the oven: Set your oven to 420°F and position the oven rack on the third shelf from the top to ensure the chicken cooks evenly and browns nicely.
- Prepare the chicken: Place the raw boneless, skinless chicken thighs in a large 13” x 9” casserole dish. Lightly sprinkle the sea salt over the thighs to season them directly.
- Make the marinade: In a small bowl or measuring cup, combine avocado oil, honey, lemon juice, liquid aminos or soy sauce, rice vinegar, minced garlic, and black pepper. Stir well until thoroughly mixed. If the honey resists mixing, microwave the marinade for 30 seconds to loosen it, then stir again.
- Coat the chicken: Pour the marinade evenly over the chicken thighs in the casserole dish. Use a spoon to baste the chicken, ensuring every piece is well coated with the flavorful marinade.
- Bake the chicken: Place the dish in the preheated oven and bake for 20 minutes, or until the chicken thighs reach an internal temperature of 160°F for safety and juiciness.
- Baste and broil: Remove the dish from the oven and spoon the marinade over the chicken once more. Switch your oven to the High Broil setting and broil the chicken for 8 to 10 minutes, watching closely until the skin is golden-brown and crispy.
- Serve: Remove from oven and serve the honey lemon garlic baked chicken thighs garnished with sesame seeds and chopped green onions, alongside your favorite side dishes.
Notes
- Use a meat thermometer to ensure chicken thighs reach an internal temperature of 165°F for safe consumption; 160°F followed by resting is often sufficient but use caution.
- If you can't find liquid aminos, low-sodium soy sauce is a great substitute.
- Microwaving the marinade briefly helps the honey blend smoothly with the other ingredients.
- For a gluten-free option, ensure your soy sauce or liquid aminos are certified gluten-free.
- Let the chicken rest a few minutes after broiling to allow juices to redistribute.
