Instructions
- Activate Yeast: In a small bowl, mix lukewarm milk, sugar, and instant yeast. Let it sit for 5–10 minutes until it becomes bubbly, indicating the yeast is active.
- Mix Ingredients: In a large mixing bowl, combine the flour, egg, melted butter (or butter and olive oil mixture), and the activated yeast mixture.
- Add Warm Milk: Pour the remaining lukewarm milk over the mixture and blend everything together thoroughly to form a sticky dough.
- Knead Dough: Knead the dough on a floured surface for about 8–10 minutes until the dough is soft, smooth, and elastic.
- First Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rest for about 1 hour or until it doubles in size.
- Shape Rolls: Punch down the risen dough and divide it into small portions (about 1.5-2 inches each). Shape each piece into a smooth, rounded ball.
- Arrange in Tray: Place the dough balls closely together in a pre-greased baking tray so they can expand and stick together, creating the honeycomb effect.
- Second Rise: Cover the tray again and let the rolls rest for another 30–40 minutes until puffed and almost doubled.
- Prepare for Baking: Preheat your oven to 350°F (180°C). Brush the tops of the dough balls generously with unsalted butter.
- Add Seeds: Sprinkle sesame seeds and nigella seeds over the buttered rolls, if using, to add texture and flavor.
- Bake: Bake the rolls in the preheated oven for 25–30 minutes, until golden and baked through.
- Broil for Color: Switch to broil mode for a few minutes to brown the tops nicely, creating a golden crust without drying out the bread.
- Rest Bread: Remove the tray from the oven and immediately cover the bread with a kitchen towel for 10–15 minutes to retain moisture and softness.
- Honey Glaze: While the bread is still warm, brush generously with honey to create a shiny, sweet glaze that enhances both flavor and appearance.
