Ingredients
Crepe Batter
- 80g plain flour
- 15g corn flour
- 30g granulated sugar
- 1/8 teaspoon salt
- 3 eggs
- 40g butter, melted
- 2 teaspoons vanilla extract
- 260ml whole milk, warm
- Yellow food colouring (optional)
Whipped Cream
- 400ml double cream
- 100g icing sugar (adjust to taste)
- 2 teaspoons vanilla extract
Extras
- 2 large mangoes, peeled and cut into long slices
Instructions
- Prepare the crepe batter: In a large bowl, whisk together plain flour, corn flour, granulated sugar, and salt. Add eggs, melted butter, vanilla extract, warm milk, and optional yellow food colouring. Whisk just until combined. Pour the batter through a sieve to remove lumps. Cover and refrigerate for 1 hour to rest, which helps create softer crepes (optional step).
- Cook the crepes: Heat a non-stick pan over medium heat. Stir the rested batter and pour a small amount into the pan, swirling to create a thin layer. Cook for 1-2 minutes until the surface is set and no raw batter remains; no need to flip. Remove crepe and repeat until all batter is used. Let the crepes cool fully.
- Make the whipped cream: In a large bowl, combine double cream, icing sugar, and vanilla extract. Whip until thickened and soft peaks form. Chill in the fridge until ready to assemble.
- Assemble the pancakes: Place a cooled crepe on a plate. Spoon or pipe a dollop of whipped cream in the center, then top with a slice of mango. Fold the crepe sides inward to encase the filling. Repeat with remaining crepes. Chill assembled pancakes in the fridge for 20 minutes before serving.
Notes
- Resting the batter is optional but improves crepe softness and texture.
- You can adjust the sweetness of the whipped cream by varying the icing sugar quantity.
- Use ripe, sweet mangoes for the best flavor and texture.
- If you want a vibrant yellow color in the crepes, add a few drops of yellow food colouring to the batter.
- Ensure the crepes cool completely before assembling to prevent the whipped cream from melting.
