Ingredients
Marinade
- 1 Egg white
- 2 Tbs Cornstarch
- 2 Tbs Mirin
- 1 Tbs Soy sauce
- ½ Tbs Oil
Dry Mix
- 1 cup Flour
- 1 cup Cornstarch
- ½ tsp Baking powder
- ¼ tsp Salt
Chicken
- 1 Kilo Chicken, cubed
Hot Honey Sauce
- ⅓ cup Honey
- 2 Tbs Sriracha
- 5 cloves Garlic, chopped
- ⅓ cup Rice vinegar
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1 Tbs Oil (for sautéing)
Instructions
- Prepare Dry Mix: In a bowl, whisk together the flour, cornstarch, baking powder, and salt until well combined.
- Make Marinade: In another bowl, combine egg white, cornstarch, mirin, soy sauce, and oil. Remove one tablespoon of this marinade and add it to the dry mix, whisking to integrate and slightly moisten the dry ingredients.
- Marinate Chicken: Add chicken cubes to the remaining marinade, ensuring they are fully coated. Let the chicken marinate for at least 15 minutes, or up to overnight in the refrigerator for deeper flavor.
- Coat Chicken: After marinating, dredge each chicken piece thoroughly in the dry mix coating, ensuring an even layer on all sides.
- Fry Chicken: Heat approximately 2 inches of oil in a wok or frying pan over medium-high heat. Fry the coated chicken pieces until golden and crispy, about 4-6 minutes, turning as needed. Remove and drain on paper towels.
- Prepare Hot Honey Sauce: In a clean wok or frying pan, heat 1 tablespoon of oil over medium heat. Add chopped garlic and sauté for about 1 minute until fragrant. Add honey, sriracha, rice vinegar, garlic powder, and paprika. Stir and bring to a gentle simmer.
- Toss Chicken in Sauce: Add the fried chicken bites to the sauce in the pan. Toss well to coat every piece evenly with the hot honey sauce.
- Serve: Serve the hot honey chicken bites immediately, optionally garnished with crushed chili flakes for extra heat.
Notes
- Marinate chicken for at least 15 minutes; longer marination intensifies flavor and tenderness.
- Ensure oil temperature is hot enough to fry chicken to crispy perfection without absorbing excess oil.
- Optionally garnish with crushed chili flakes for added spiciness.
- Can be served as an appetizer or main dish paired with rice or vegetables.
- Use fresh garlic for the best sauce flavor.
