This hot spinach dip is a creamy, cheesy appetizer perfect for gatherings or cozy nights in. Combining sour cream, cream cheese, fresh spinach, crispy bacon, and a blend of cheddar and mozzarella cheeses, it bakes to golden perfection with a gooey, flavorful topping. Easy to prepare and versatile to serve, it's a crowd-pleaser served warm or cold.

  • Total Time: 35-40 minutes
  • Yield: 8 servings

Ingredients

Base

  • 1 cup sour cream
  • 8 ounce cream cheese

Vegetables

  • 1 small onion, diced
  • 8 ounce fresh spinach, finely chopped

Additional Flavorings

  • ½ cup crispy bacon pieces
  • 4 teaspoons minced garlic
  • 1 teaspoon ground pepper
  • ¼ teaspoon salt

Cheeses

  • 1 cup cheddar cheese, shredded
  • 2½ cups mozzarella cheese, shredded (1 cup reserved for topping)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375ºF and grease an 8×8 baking dish to prevent sticking and ensure easy serving.
  2. Mix Cream Base: In a mixing bowl, combine the cream cheese and sour cream. Use an electric mixer to whip them together until smooth and creamy, creating a rich base for the dip.
  3. Add Remaining Ingredients: Add the diced onion, finely chopped spinach, crispy bacon pieces, minced garlic, ground pepper, salt, shredded cheddar cheese, and 1½ cups of the shredded mozzarella cheese to the cream mixture. Use a spatula to thoroughly combine all ingredients into a uniform mixture.
  4. Transfer to Baking Dish: Pour the combined mixture into the prepared baking dish, spreading it evenly. Sprinkle the reserved 1 cup of shredded mozzarella cheese evenly over the top to create a cheesy crust when baked.
  5. Bake Until Golden: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the dip is bubbling hot.

Notes

  • Use a mix of cheeses for depth of flavor: cream cheese for creaminess, mozzarella for gooeyness, and Parmesan for a nutty, salty punch (optional).
  • If using frozen spinach, ensure all moisture is squeezed out with paper towels to avoid a watery dip.
  • Keep the dip warm by transferring it to a slow cooker set on warm, stirring occasionally.
  • Store leftovers in an airtight container or tightly wrapped in plastic wrap in the refrigerator for up to 4 days.
  • Reheat leftovers in a 350ºF oven until bubbly, or use a microwave, stovetop, or slow cooker on low or warm settings for convenience.
