- 10 pitted olives, sliced
- 20 grams fresh basil
- 10 cherry tomatoes
- 5 sundried tomatoes, chopped
- 1 tsp dried oregano
- 2 cloves garlic, crushed
- 1 tbsp olive oil
Asian-Inspired Marinade
- 1 lime (juiced)
- 2 tbsp fresh ginger root, grated
- 2 tbsp soy sauce
- 2 tbsp rice wine
- 20 grams coriander/cilantro
- 1 tbsp sesame oil
Spicy Herb Coconut Sauce
- 1 lime (juiced)
- 1 red chili pepper, sliced
- 2 tbsp fresh ginger root, grated
- 2 cloves garlic, crushed
- 1 tbsp lemongrass
- 20 grams fresh coriander/cilantro and fresh mint
- 4 tbsp coconut milk
Instructions
- Preheat the oven: Set your oven to 150℃ (300℉) to ensure a gentle, even cooking temperature ideal for steaming the salmon en papillote.
- Prepare the salmon: Carefully remove any remaining pin bones from the salmon side and trim the tail end so it fits neatly on your baking tray, ensuring even cooking.
- Assemble the parcel: Lay the salmon on a large piece of foil on an oven tray. Scatter your choice of herbs, spices, and flavorings evenly over the top of the salmon for maximum taste. Then fold the foil over the salmon to form a sealed parcel, pressing the edges tightly to trap the steam inside during cooking.
- Bake the salmon: Place the foil parcel in the preheated oven and bake for 25 to 30 minutes, allowing the salmon to cook gently while absorbing the aromatic flavors.
- Steam and rest: After baking, remove the parcel from the oven and let it rest unopened on the counter for 15 minutes. This resting period allows the salmon to finish cooking with gentle steam and helps the flavors to meld.
- Serve: Carefully open the foil parcel to avoid hot steam and slice the salmon into individual portions. Serve hot or at room temperature accompanied by your choice of sides for a delicious, healthful meal.
