Caramelized Onions
- 2 yellow onions
- 1 tbsp avocado or olive oil
- Sea salt to taste
Burgers
- 1 pound ground beef, shaped into 4 patties about 3/4" thick
- 4 slices cheddar cheese (see notes, omit for dairy free and Paleo)
- 8 leaves green leaf lettuce, washed and dried (or 2 small heads iceberg if preferred)
- 2 tomatoes, sliced (10 ounces total)
- 4 dill pickles, thinly sliced
- 2 tsp yellow mustard
Secret Sauce
- 1/4 cup mayonnaise (preferably avocado oil mayo)
- 2 tbsp ketchup (sugar free recommended)
- 1 tbsp pickle relish or minced dill pickle (for sugar free)
- 1/2 tsp white wine vinegar
- Optional: maple syrup or coconut aminos to taste
Instructions
- Prepare the Caramelized Onions: Heat a large 10" pan over medium heat. Dice the onions into 1/2" pieces or slice into half-moons. Add 1 tbsp of avocado or olive oil to the heated pan, then add the onions. Cook over medium or medium-low heat, stirring occasionally, until the onions soften and brown, about 20-30 minutes. Season with sea salt to taste. Set aside approximately 1 cup of caramelized onions.
- Preheat Grill or Griddle: Heat your grill or griddle over medium heat until it reaches a steady temperature between 350°F and 400°F. While heating, prepare all burger toppings and mix the secret sauce ingredients.
- Prepare and Season Burgers: Divide 2 tsp of yellow mustard evenly among the 4 patties, spreading about 1/2 tsp per patty on one side. Plan to grill the mustard side down first to infuse flavor.
- Grill Burgers: Place the patties on the grill, mustard side down, and cook for 6-10 minutes per side depending on your desired doneness. When flipping the burgers halfway through cooking, add a slice of cheddar cheese to each patty to melt.
- Assemble Lettuce Wraps: Once cooked to your liking, immediately serve the burgers in lettuce leaves. Top each with caramelized onions, sliced tomatoes, dill pickles, and a generous spoonful of the secret sauce. Wrap to enjoy.
