Chakli, also known as Murukku, is a traditional Indian crunchy snack made from rice flour, gram flour, and spices. This instant chakli recipe is perfect for festive occasions like Diwali, offering a delicious, crisp snack that pairs well with tea or as a side dish. It features a perfectly spiced, golden-brown spiral made by deep frying the dough formed using a chakli press.

  • Total Time: 35 minutes
  • Yield: Approximately 20 chaklis (about 400 grams total)

Ingredients

Dry Ingredients

  • 1 cup rice flour
  • 6 tablespoons gram flour
  • 2 tablespoons fried gram dal flour
  • 2 teaspoons sesame seeds
  • 1 teaspoon chili powder
  • Salt, to taste

Wet Ingredients

  • 1 tablespoon soft butter or hot oil
  • Water, as needed for dough

For Frying

  • Oil for deep frying

Instructions

  1. Prepare the dough: In a mixing bowl, combine rice flour, gram flour, fried gram dal flour, sesame seeds, chili powder, and salt. Mix all dry ingredients well. Add soft butter or hot oil and mix. Gradually add enough water to form a soft yet stiff dough suitable for pressing.
  2. Heat the oil: In a deep frying pan or wok, heat oil over medium heat until it is hot enough for deep frying.
  3. Shape the chakli: Grease a chakli press fitted with a star-shaped nozzle with some oil. Fill the press with a portion of dough. Press out round spirals of dough either directly over the hot oil or onto a ladle and then transfer gently into the oil.
  4. Deep fry: Fry the chaklis in hot oil, turning occasionally, until they turn golden brown and crispy. The sizzling sound will reduce when they are cooked through.
  5. Cool and store: Remove the chaklis from oil using a slotted spoon and drain on paper towels. Allow them to cool completely before storing in an airtight container. Serve as a snack or side dish.

Notes

  • You can omit fried gram dal flour and use gram flour alone if preferred.
  • Butter or oil can be used based on your preference for flavor and texture.
  • Ensure the oil is at proper temperature to avoid greasy chaklis.
  • Cool chaklis completely for maximum crispness before storing.
