This Instant Pot Chicken and Gravy recipe features tender, juicy chicken breasts cooked to perfection and smothered in a creamy ranch-flavored gravy. Quick and easy to prepare, this comforting dish is ready in just over 30 minutes and pairs wonderfully with mashed potatoes, pasta, or rice for a satisfying meal.

  • Total Time: 33 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 2 pounds boneless skinless chicken breasts

Liquid and Seasonings

  • 1.5 cups chicken broth
  • 1 packet ranch seasoning mix (Hidden Valley recommended)
  • 1/4 teaspoon garlic powder
  • Pepper to taste

Thickening and Gravy

  • 1 teaspoon cornstarch
  • 1 teaspoon cold water
  • 1 packet chicken gravy mix

Instructions

  1. Prepare the broth mixture: Add the chicken broth, ranch seasoning mix, garlic powder, and pepper to the Instant Pot. Whisk thoroughly until all powder seasonings are completely dissolved to create a flavorful base for the chicken.
  2. Cook the chicken: Place the chicken breasts into the Instant Pot, ensuring they are mostly submerged in the broth mixture. Spoon some liquid over the top if necessary. Close the lid and set the valve to "sealing". Cook on high pressure for 8 minutes.
  3. Release the pressure: Once the cooking time completes, allow the pressure to release naturally for 5 minutes, then perform a quick release to let out any remaining pressure safely.
  4. Remove and shred chicken: Carefully remove the chicken breasts from the Instant Pot and set aside. Prepare to thicken the gravy as you cut the chicken into bite-sized pieces.
  5. Make the gravy: Mix the cornstarch and cold water in a small bowl until smooth. Pour this mixture into the Instant Pot along with the chicken gravy mix. Turn on the "sauté" function and whisk continuously until the gravy mix has dissolved and the sauce starts to thicken. Once the desired thickness is reached, turn off the sauté function by pressing the "keep warm" button.
  6. Combine and serve: Return the chopped chicken to the Instant Pot, stir to coat with the ranch gravy, and serve immediately. This dish pairs excellently with mashed or baked potatoes, egg noodles, pasta, or rice for a hearty meal.

Notes

  • Ensure the chicken is mostly submerged in liquid before cooking to maintain moisture.
  • Natural pressure release helps keep chicken tender while quick release prevents overcooking.
  • Adjust thickness of gravy by varying cornstarch amount or cooking time on sauté setting.
  • Use fresh ground pepper for best flavor.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently in the microwave or stovetop.
