Ingredients

Seasoning Mix

  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup chicken broth

Instructions

  1. Prepare the seasoning: In a small bowl, combine Italian seasoning, garlic powder, smoked paprika, salt, and black pepper. Mix thoroughly to create a uniform spice blend.
  2. Season the chicken: Rub the prepared seasoning mix all over each chicken breast, ensuring even coverage for maximum flavor.
  3. Sear the chicken: Set the Instant Pot to the sauté function and add olive oil. Once hot (approximately 2 minutes), add the chicken breasts and sear them until both sides are golden brown. Remove and set aside. This step can be skipped if using frozen chicken breasts.
  4. Add broth and set up for pressure cooking: Pour chicken broth into the Instant Pot and place the trivet inside. Position the seared chicken breasts on top of the trivet.
  5. Seal and cook: Close the Instant Pot lid, lock it, and set the steam valve to the sealed position. Select manual or pressure cook mode on high pressure. Cook for 5 minutes for fresh chicken breasts, or 10 minutes if using frozen.
  6. Pressure release: Once cooking is complete, allow the Instant Pot to release pressure naturally for 10 minutes. Afterward, perform a quick release by turning the valve to venting to release remaining steam safely. Open the lid carefully.
  7. Rest and serve: Transfer the chicken to a cutting board and let rest for 5 minutes. Slice before serving to retain moisture and tenderness.

  • To Store: Cool leftovers completely before placing them in an airtight container. Refrigerate for up to 4 days.
