Ingredients
Fruits and Liquids
- 6 apples (3 Honey Crisp and 3 Granny Smith), sliced into rounds
- ½ lemon, sliced into rounds
- ½ orange, sliced into rounds
- 6 cups water
- 1 tablespoon vanilla extract
Spices and Flavorings
- 2 cinnamon sticks
- 1 star anise (optional)
- ½ tablespoon pumpkin spice
- ½ cup maple syrup
- 1 ⅓ cups pumpkin puree
Instructions
- Prepare Ingredients: Slice the apples, lemon, and orange into rounds, and gather the remaining ingredients for the cider.
- Combine in Instant Pot: Add the cut fruits, water, cinnamon sticks, star anise (if using), and vanilla extract to the Instant Pot or pressure cooker.
- Pressure Cook: Cook on high pressure for 15 minutes to allow flavors to meld and fruits to soften.
- Pressure Release: Perform a natural pressure release for 10 minutes, then quick release the remaining pressure. Carefully remove the lid and let the cider cool completely.
- Strain the Cider: Use a colander lined with cheesecloth to strain the cider, pressing the fruit to extract all the juice. Discard the solids.
- Mix in Flavorings: Stir in the maple syrup, pumpkin puree, and pumpkin spice until fully combined.
- Serve: Serve the cider warm or chilled. Optionally, garnish with whipped cream, a sprinkle of cinnamon, and a caramel drizzle for extra indulgence.
Notes
- For Sweeter Apple Cider: Adjust sweetness by adding more maple syrup as desired.
- Adjust the Spices: Customize the spice profile by adding nutmeg, cloves, or extra cinnamon according to your preference.
- Spiked Version: Add a splash of bourbon or rum for an adult version of this cider.
- Storage: Store any leftover cider in an airtight container in the refrigerator for up to one week.
- Crockpot Alternative: You can cook the cider on low for 8 hours or on high for 5 hours in a crockpot instead of the Instant Pot.
