- 4 large Honeycrisp apples (about 2 pounds), peeled and cored

Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F. Lightly spray a loaf pan with cooking spray and line it with parchment paper to ensure easy removal of the cake after baking.
- Slice Apples: Using a mandoline set to ⅛ inch, carefully slice the peeled and cored apples into very thin and flexible rings. Exercise caution by using a safety guard or cut-resistant glove. Then cut the apple slices in half and set aside.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, cardamom, and salt until evenly combined.
- Whisk Wet Ingredients: In a large bowl, whisk the eggs until light and foamy. Add the milk, melted butter, and vanilla extract, whisking until everything is fully incorporated.
- Combine Mixtures: Gently stir the dry ingredient mixture into the wet ingredients until just incorporated, being careful not to overmix.
- Incorporate Apples: Add the thinly sliced apples to the batter and gently toss until all apple slices are evenly coated with the batter.
- Layer the Cake: Add a handful of the coated apple slices into the prepared loaf pan, spreading them out and pressing down lightly. Continue layering until all apple slices are used. Pour any remaining batter over the top and smooth the surface.
- Bake: Place the loaf pan on a sheet pan to catch any spills, then bake for 55-65 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Cool: Let the cake cool in the pan for 30 minutes. Use the parchment paper to lift the cake out of the pan and transfer it to a wire rack to cool completely before slicing.
