  • 2 extra large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 6 tablespoons olive oil (divided use)

Instructions

  1. Prepare the Bread Crumb Mixture: Grate the Pecorino Romano and Parmesan cheeses if not pre-grated. In a bowl, combine bread crumbs, grated cheeses, dried basil, garlic powder, black pepper, and salt. Mix well to create the breading mixture.
  2. Slice and Pound Chicken: If using thick chicken breasts, slice them in half horizontally to create thin cutlets. Place the chicken cutlets between large sheets of plastic wrap and gently pound with a meat mallet or heavy pan until about 1/4 inch thick. Flip and pound the other side. Discard plastic wrap and wash hands thoroughly afterward.
  3. Prepare Egg Wash: Crack the eggs into a small bowl and season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Beat the eggs with a fork until well combined.
  4. Bread the Chicken: Set up an assembly line with chicken, egg wash, bread crumb mixture, and a clean platter. Dip each cutlet first into the egg wash, then coat thoroughly with the bread crumb mixture on both sides. Place the breaded cutlets on the platter.
