Instructions
- Prep Vegetables: Heat the olive oil in a large nonstick skillet over medium heat. Add the chopped onion and green bell pepper, and sauté for about 5 minutes until the vegetables are tender and fragrant.
- Add Garlic: Stir in the minced garlic and cook for another 30 seconds, allowing the garlic to release its aroma without burning.
- Cook Turkey: Add the lean ground turkey to the skillet. Use a spoon to break it up into small pieces, and cook for 7 to 8 minutes until the turkey is fully cooked and no longer pink.
- Season: Sprinkle in the dried Italian seasoning, kosher salt, and black pepper. Stir thoroughly to evenly distribute the seasonings throughout the turkey mixture.
- Add Beans and Tomatoes: Mix in the rinsed cannellini beans and fire-roasted diced tomatoes. Stir well to incorporate all ingredients.
- Incorporate Spinach: Add the fresh baby spinach to the skillet. Stir it into the turkey mixture and cook for about 2 minutes, just until the spinach begins to wilt.
- Finish and Serve: Sprinkle the grated Parmesan cheese over the top. Serve the dish immediately while warm, enjoying the melty cheesy finish.

- Bell pepper: You can substitute any color bell pepper depending on your preference or what you have on hand.
- Ground turkey: 93% lean ground turkey is ideal for flavor and texture, but 99% lean can be used if preferred. Adjust quantity slightly if using 1.3 pounds.
- Beans: Cannellini beans provide creaminess, but Great Northern beans or chickpeas are suitable alternatives.
- Tomatoes: Fire-roasted diced tomatoes add smoky depth, but regular or petite diced tomatoes also work well.
