Ingredients
Seafood Pasta
- ¼ cup olive oil
- 1-2 cloves garlic, minced
- 12 grape or cherry tomatoes, halved
- 2-4 tablespoons freshly chopped parsley
- 1-2 dashes hot pepper flakes (optional)
- 1 pound (500 grams) seafood of choice (shrimp, clams, mussels, cut up halibut, tuna, etc.)
- 1-2 dashes salt (preferably on tomatoes)
- 3 cups cooked pasta (6-7 ounces dry or 600 grams cooked)
- ¼ cup reserved pasta water (plus extra if needed)
Instructions
- Prepare the Base: In a large pan, heat ¼ cup olive oil over medium heat. Add minced garlic, halved tomatoes, and freshly chopped parsley. Stir and gently squish the tomatoes often while cooking for about 10 minutes until the tomatoes start to blister and soften.
- Add Seasoning and Seafood: Sprinkle in hot pepper flakes if using, then add the seafood. Cover the pan and cook for about 4 minutes to allow the seafood to cook through.
- Finish the Sauce: Uncover the pan, increase the heat, and cook for another 1-2 minutes while tossing frequently to thicken the sauce without burning it.
- Toss with Pasta: Add the cooked, drained pasta along with ¼ cup of reserved pasta water. Toss continuously over high heat for about 1 minute, adding more pasta water if the pasta seems too dry. The sauce should become creamy and coat the pasta evenly.
- Serve: Serve immediately with a sprinkle of freshly chopped parsley on top. Enjoy your vibrant Italian seafood pasta!
Notes
- This dish pairs best with long pasta varieties like spaghetti.
- Approximate measure: ½ to ¾ cup dry pasta (about 2 ounces or 56-60 grams) yields 1 cup cooked pasta.
- Recommended seafood: shrimp, mussels, scallops, lobster, crab, halibut, sea bass, or tuna.
- Frozen seafood can be used if thawed fully and drained to remove excess moisture, ensuring no added sauces or spices.
- Best consumed freshly made; leftovers can be stored in an airtight container in the refrigerator up to 1 day and reheated on the stove with a bit of pasta water to restore creaminess.
