Instructions

  1. Cook the Bacon: Preheat your oven to 375°F. Cook the bacon pieces in a large cast iron skillet over medium heat until crispy. Remove the bacon from the skillet and set aside. Drain the bacon fat but reserve it for later use in the recipe.
  2. Sear the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with kosher salt and black pepper. Add a tablespoon of butter, oil, or the reserved bacon fat to the skillet, then sear the chicken thighs in batches over medium heat until they develop a golden crust and reach an internal temperature of about 190°F for tender, fully cooked chicken. Remove the chicken from the skillet and allow it to rest for 10 minutes, then cut into bite-sized pieces.
  3. Build the Sauce: Add a tablespoon of reserved bacon fat or butter to the skillet along with the diced yellow onion, diced jalapeños, and a pinch of salt. Cook over medium heat for 5 to 7 minutes until the vegetables are softened. Add the minced garlic and cook for about 30 seconds until fragrant.
