  • 1 tsp vanilla extract
  • 1 egg

  • 3/4 cup fresh or frozen blueberries (do not thaw if using frozen)

Optional Glaze:

  • 1 tbsp softened butter
  • 1 tbsp finely ground sweetener
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the danish dough and filling.
  2. Melt Cheese for Dough: Place shredded mozzarella and cream cheese in a microwave-safe bowl. Microwave for 1 minute, stir, then microwave another 30 seconds. Stir again and microwave an additional 30 seconds until the cheese mixture is smooth and uniform, resembling cheese fondue.
  3. Prepare Dough: Add the melted cheese with the remaining dough ingredients (egg, almond flour, coconut flour, ground golden flax or additional almond flour, sweetener, vanilla) to a food processor. Mix using the dough blade until you get a uniform color and consistency. If you don't have a food processor, mix with a wooden spoon and knead by hand on wax paper to incorporate thoroughly.
  4. Form Dough Base: Wet your hands and press the dough out on a parchment-lined baking sheet into a roughly 9x12 inch rectangle, smoothing it evenly.
  5. Make Cream Cheese Filling: Add softened cream cheese, vanilla, egg, and sweetener to the food processor (no need to wash after dough) or a mixing bowl. Blend or beat until smooth and creamy.
  6. Assemble Danish: Spread the cream cheese filling down the center of the dough rectangle. Adjust with a spatula to keep the filling centered. Sprinkle blueberries evenly on top of the filling.
  7. Braid Dough Edges: Cut 1-inch wide strips down each side of the dough edges along the length of the rectangle. Fold and crisscross the strips over the filling, braiding the edges over the top to encase the filling attractively.
  8. Bake: Bake in the preheated oven for 40-45 minutes, until the dough is golden brown and the cream cheese filling is set and no longer jiggles when gently shaken.
