Ingredients
Chicken Mixture
- 2 cups shredded chicken
- 1/2 medium onion, diced
- 1 cup sliced mushrooms
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
Sauce
- 4 tablespoons butter, divided
- 1 cup chicken broth
- 1 cup heavy whipping cream
- 1 teaspoon xanthan gum
- 1 cup shredded Monterey Jack cheese (for sauce)
Assembly
- 1 box Natural Heaven Veggie Pasta Noodles
- 1 cup chopped spinach
- 1 cup shredded Monterey Jack cheese (for topping and layering)
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
- Sauté Vegetables and Chicken: In a large skillet over medium heat, sauté 2 tablespoons of butter with diced onions, sliced mushrooms, garlic powder, Italian seasoning, and salt until the mushrooms become tender, about 5 minutes. Add the shredded chicken and cook for another 2 minutes. Remove the mixture from the skillet and set aside in a bowl.
- Prepare the Sauce: Using the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the chicken broth and allow it to simmer. Slowly pour in the heavy whipping cream and continue to simmer for 2 more minutes. Stir in the xanthan gum occasionally to thicken the sauce. Lower the heat and add 1 cup of shredded Monterey Jack cheese, stirring until melted and thickened. Mix in the chicken and vegetable mixture along with the chopped spinach. Remove from heat.
- Assemble the Casserole: In an 8x8 inch baking dish, layer the veggie pasta noodles, followed by a layer of the creamy chicken mixture, then a layer of shredded cheese. Repeat the layers until all ingredients are used, finishing with a top layer of shredded cheese.
- Bake: Place the casserole in the oven and bake for 15 minutes, or until the cheese on top is bubbling and golden. Remove from oven and let it rest a few minutes before serving.

- You can substitute shredded rotisserie chicken for convenience.
- For a dairy-free version, use coconut cream and a dairy-free cheese alternative.
