Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and coat a 9"x13" baking pan with cooking spray to prevent sticking.
  2. Sauté Vegetables: Heat the olive oil in a large pan over medium-high heat. Add the finely diced onion and bell peppers, cooking them for 5-6 minutes or until they soften and become tender.
  3. Add Garlic and Season: Stir in the minced garlic and cook for an additional minute. Season the vegetable mixture with salt and pepper to taste, enhancing the flavors.
  4. Combine Soup and Chicken Mixture: Incorporate the chili powder, ground cumin, cream of chicken soup, canned diced tomatoes with green chiles (including the juice), and the cooked diced chicken. Stir well to combine everything and heat through evenly.
  5. Layer Casserole - First Layer: Arrange one-third of the corn tortilla squares evenly on the bottom of the prepared baking dish. Spoon one-third of the chicken mixture over the tortillas, spreading it out, then sprinkle one-third of the shredded cheese on top.
