Ingredients

Toasted Muesli

  • 3 cups rolled oats
  • ½ cup sunflower seeds
  • ½ cup shredded coconut
  • 1 tsp cinnamon
  • 2 Tbsp coconut oil
  • 4 Tbsp maple syrup
  • 2 Tbsp rice bran oil

Berry Coulis

  • 300g frozen mixed berries
  • 2 Tbsp honey

  • 600g thick Greek yoghurt

Instructions

  1. Prepare the Toasted Muesli: Preheat your oven to 160°C fan bake. In a large bowl, combine the rolled oats, sunflower seeds, shredded coconut, and cinnamon, mixing well to evenly distribute the spices and dry ingredients.
  2. Melt the Oils and Syrups: In a glass bowl, add the coconut oil, maple syrup, and rice bran oil. Microwave in 30-second bursts until the coconut oil has fully melted. Stir the mixture thoroughly to combine before pouring it over the dry ingredients.
  3. Mix and Bake the Muesli: Using a spatula, fold the wet ingredients into the dry mix until everything is evenly coated. Transfer the mixture into a roasting dish and bake in the oven for 15 minutes. Remove and stir to ensure even toasting, then bake for an additional 10 minutes. Stir again before taking it out of the oven and letting it cool completely.
  4. Make the Berry Coulis: Place the frozen mixed berries and honey in a saucepan. Simmer gently over low heat, allowing the berries to break down, and mash any larger pieces with the back of a spoon if necessary. Once the coulis reaches a thick, sauce-like consistency, remove it from heat and let it cool.
  5. Assemble the Yoghurt Pots: To six serving glasses, add a thick layer of Greek yoghurt at the base. Follow with a layer of the cooled berry coulis, then a layer of the toasted muesli. Repeat these layers once more with yoghurt, coulis, and muesli to create a visually appealing layered presentation.
  6. Chill and Serve: Place the assembled yoghurt pots in the fridge to set and chill before serving. These pots can be prepared up to four days in advance, allowing the flavors to meld beautifully.
